The clamp to prevent the flow of the Camembert type cheese once encased has a static (2) and a sliding jaw (3). The jaws have parallel vertical retaining faces (F) and the mobile jaw (3) is constrained to apply pressure to the retained cheese. The clamp may have a horizontal base plate (1) the static jaw (2) being a rectangular vertically cantilevering plate. The mobile plate (3) may be 'T' shaped in plan with the leg sliding between two parallel static thrust plates cantilevering from the base (1). A wedge through slots in the leg and the thrust plates thrusts the moving jaw (3) against the cheese. Alternative designs may have spring pistons, frictions screws through a slotted based return of the mobile jaw or simple screw jacks (18, 19).
