For the production of soluble blood powders (for example whole blood powder, haemoglobin powder, plasma powder) from mixtures which contain the constituents of blood in the form of solutions, suspensions or emulsions, the starting mixture is diluted with water to a solution more dilute by about 2% compared with the composition of natural blood. To prevent coagulation, an anticoagulant, expediently sodium carbonate and citric acid, is added to this solution. The elements of the blood having a separated form are then solubilised in a flow system under a pressure of 50-200 atm, the mixture is preserved and/or sterilised, then evaporated to a dry matter content of 30-50% and dried by spray drying. Food additives or feed additives are produced from the pulverulent product, preferably with addition of water.
