PRODUCTION OF YAM-CONTAINING UDON (WHEAT VERMICELLI)

摘要

PURPOSE:To obtain a healthy food having a component and a taste which do not exist in ordinary UDON, by blending fully ground down yam with wheat flour and a small amount of salt. CONSTITUTION:Yam is ground down, well kneaded, blended with wheat flour and a small amount of salt and yam-containing UDON is produced by ordinary production method of UDON.
