The invention relates to a process for obtaining the standard from Sorgum saccharatum. The raw juice is extracted from the plant by pressing and is subjected to fermentation in the presence of certain strains of Saccharomyces cerevisiae specially adapted for this purpose. As compared to the process used to obtain the boron grain standard, the process according to the invention shortens the time to complete the technological flow (by reducing the fermentation time and by eliminating the solubilization and saccharification operations of the solubilized amison and the pasteurization of the starch glue to sowing.1) By the procedure established in one liter of raw juice with 18-20% total soluble substances, 80-100 ml of 100% ethyl alcohol are obtained, and from the harvest of Sorghum saccharatum strains, per hectare can be obtained 2500-3500 l of 100% ethyl alcohol.
