The perfume or flavouring contains as active component at least one safronic acid ester of the formula IMAGE in which R1, R2 and the dotted lines have the meanings stated in Claim 1. It can additionally contain other compounds too. A mixture of compounds of the formula IV is prepared by hydrogenating a compound of the formula IMAGE and refluxing the resulting 4-hydroxy compound with p-toluenesulphonic acid for 2 to 7 hours.
