Process and apparatus for the fermentation of wine to give sekt, comprising a vertical high-pressure tank having a large chamber and a small chamber. The two chambers can be closed off from each other by a separation valve, an agitator being mounted in the small lower chamber. On account of the process, after the fermentation the yeast will gather at the lowest point of the tank in the small chamber. By closing the separation valve this yeast is enclosed and is isolated from the actual beverage. The clear yeast-free sekt can be taken off via a sekt outlet line at the lowest point of the large upper chamber in the lowest conical region.
