A smooth stirred yoghurt is prepared by a process which comprises combining whey protein concentrate obtained by ultrafiltration of whey with milk, or with completely or partly skimmed milk, applying pasteurization, incubating the yoghurt milk mix with a yoghurt producing culture and stirring the resulting gel, in which process at least a part of the whey protein concentrate is added after pasteurization of the mix comprising the other constituents of the yoghurt milk and/or at least a part of the whey protein concentrate is heated and homogenized before being mixed with the other constituents of the yoghurt milk before pasteurization takes place.
