Determination of temporal development of acidity comprises (a) a series of sequential pH values (Mti,j) are obtd at successive times (ti) in order to obtain a primary number of consecutive values within each group which have satisfied prim. criteria w.r.t. an acidity reference value(Er). (b) a reference value(Vti,j) is established for each series by prim. weighting and is related to a reference time. (c) particular reference times with which a definitive measurement is associated are defined by a sec. weighting system from the reference times established in (b). The definitive measurements and particular reference times represent the temporal acidity of the medium. USE/ADVANTAGE - Complex fermentation monitoring, partic. lactic fermentations in dairies and study of kinetics of acidity development. Produces pH development results very close to real time results at high and low frequency irrespective of form of pH/time curve. Accurate measurement avoiding problems due to complex medium and soiling of electrodes.
