PURPOSE: To obtain a new gene useful for obtaining yeast having a small amount of hydrogen sulfide produced in beer. ;CONSTITUTION: A gene having a base sequence of the formula, suppressing an amount of hydrogen sulfide produced by yeast. The gene is obtained by cloning a DNA fragment (encoding 507 amino acid) having inhibitory action on hydrogen sulfide from a chromosome of Saccharomyces cerevisiae X-2,180 strain.;COPYRIGHT: (C)1993,JPO&Japio
