PURPOSE: To produce the SHIMADA UDON noodles which is suitable for single life or nuclear families because they can readily be cooked in a small cook pot in no need of folding, moreover the soup and additives are compactly packed and the handleability is good during the distribution delivery with damages reduced and increased appeal to the consumer. ;CONSTITUTION: The raw noodles prepared in a usual manner are hung on a bar, as they are folded in two layers and preliminarily dried to 25 to 32% moisture content. Then, another bar is used to fold the noodles into 4 layers. Then, the first hanging bar is taken off, and the noodles are dried below 15% moisture content to give the objective double-folded SHIMADA UDON noodles.;COPYRIGHT: (C)1995,JPO
