PURPOSE: To obtain a new peptidic antimicrobial substance having suppressing power against food noxious germs such as especially pathogenic fungi or putrefying bacteria. ;CONSTITUTION: This peptidic antimicrobial substance FS2 has the following physico-chemical properties: (1) molecular weight: a measured value according to a gel filtration method: 8200 and a measured value according to a fast atom bombardment mass spectrometry (FAB-MS) (average molecular weight): 3331; (2) amino acid composition (number of residues/molecule): aspartic acid or asparagine 3; lanthionine 6; glycine 4; alanine 2; valine 1; methionine 2; isoleucine 3; leucine 2; lysine 3; histidine 1 and proline 1; (3) ultraviolet absorption spectrum: no absorption at λ280nm; (4) isoelectric point: on the alkaline side; (5) thermostability: without being inactivated by heat treatment at 120°C under acidic conditions for 15 min and (6) inactivated by treatment with a proteolytic enzyme. The compound is obtained by culturing a microorganism, belonging to the genus Enterococcus and capable of producing the antimicrobial substance FS2, e.g. Enterococcus faecalis NRIC1143 strain (FERM P-13876) and isolating the substance from the resultant culture thereof.;COPYRIGHT: (C)1995,JPO
