Vegetable aconitases and nucleic acids encoding for these aconitases

A protein having enzymatic aconitase activity and comprising (i) the amino acid sequence of figure 1 or a sequence at least 75 % homologous thereto, or (ii) a variant of sequence (i) comprising a deletion of up to around 40 amino acids at the NH2 end. A plant aconitase gene and fragments derived therefrom, such as introns, coding sequences, aconitase gene promoter regions and chimeric genes including said regions, are also disclosed.
