To separate acidic polysaccharides useful for medicinal or health food from alcohol extract ginseng leaves as waste. Acid polysaccharide is precipitated by adding alcohol to the 40-l00C hot water extract of ginseng or ginseng roots and making the alcohol concentration of the extract more than 60%. Especially when hot water is extracted from ginseng roots, the amount of acid polysaccharide extracted increases when the enzyme selected from -amylase, cellulase and hemicellulase is added.;According to the present invention, useful acidic polysaccharides can be economically separated from discarded ginseng roots.
