FIELD: beet sugar industry. SUBSTANCE: essence of this method resides in studying average decade samples of molasses, calculating values of excess amount of saccharose based on difference between actual amount of dry matter and level of 83.5 and difference between finite measured value of point of crystallization of last massecuite and temperature of 40 C, calculating percentage of undercrystallized saccharose δ′ relative to mass of molasses at α′ = 1,0 1.0, plus preliminary value of quality of normal molasses using prescribed formulae. Disclosed method prescribes determining quality of normal molasses with use of prescribed formulas with regard to preliminary value, content of dry matter and saccharose and solubility of saccharose at measured finite point of crystallization of last massecuite and at temperature of 40 C. EFFECT: higher accuracy.
