PURPOSE: To tastefully cook foreign-born rice, especially Thai-born rice by cooking rice with water in which acetaldehyde is mixed. ;CONSTITUTION: Foreign-born rice is tastefully cooked using water in which acetaldehyde is mixed and hexanal is used to mask the cooked rice. Supernatant of mixture obtained by mixing MISO (soybean paste) with water or filtrate obtained by filtering MISO is preferably used as water to which acetaldehyde is mixed.
