PROBLEM TO BE SOLVED: To obtain a new galactanase which is extremely slight in production of monosaccharide (galactose, et.) even when vegetable fiber is hydrolyzed and capable of providing oligosaccharide (galactooligosaccharide) in high yield and obtain a new microorganism capable of producing the galactanase. ;SOLUTION: This galactanase S-2 has the following enzymatic properties. (a) Action, producing galactooligosaccharide and hardly isolating a monosaccharide (galactose, etc.) by acting on soybean fiber; (b) substrate specificity, acting on β-1,4-galactane, but not acting on β-1,3-galactane; (c) reacting pH, 9-12; (d) reaction temperature, at 30-60°C; (e) molecular weight, 40,000. This Bacillus sp. S-2 (FERM P-11229) belongs to the genus Bacillus and produces galactanase and has the following bacterial properties. (a) Physiologial properties, etc., (1) denitrification reaction is negative; (2) gas generating property from glucose is positive; (3) Cosa medium is negative in utilization of citric acid; (4) pH range of growth is 7.5 to 10. (b) Anaerobic growth is positive; VP test is negative and casein hydrolysis is negative. (c) Reduction of nitrate is negative.;COPYRIGHT: (C)1997,JPO
