PURPOSE:To obtain a deproteinized whey having low phosphoprotein content and salt content by concentrating sweet whey, subjecting the concentrate to ultrafiltration, fractionating the product to obtain a concentrated liquid, contacting the liquid with a cation exchange material and desorbing the adsorbed component by ion-exchange treatment. CONSTITUTION:A sweet whey derived from cow's milk is concentrated to a concentration ratio of =3 and the concentrate is subjected to ultrafiltration to obtain a concentrated liquid fraction containing concentrated milk whey protein and a filtrate liquid fraction. The concentrated liquid is adjusted to pH3.0-4.5 and contacted with a cation exchange material to adsorb the protein. The cation exchange material is separated from the liquid and the adsorbed component is desorbed by ion exchange with a salt solution. The low-phosphorus protein produced by this process has a phosphorus content of =1mg per 1g of protein. The obtained protein is mixed with the concentrated liquid contacted with the cation exchange material and the filtrate liquid fraction. If necessary, the mixture is neutralized to obtain a deproteinized whey having decreased salt content.
