PURPOSE:To produce glucosylxyluloside useful as a food raw material, etc., in a mass at a low cost by mixing alpha-D-glucose-1-phosphate and D-xylulose at a prescribed molar ratio and treating the liquid mixture with sucrose phosphorylase. CONSTITUTION:alpha-D-glucose-1-phosphate is mixed with D-xylulose at a molar ratio of 1:(2-12) and the obtained liquid mixture is treated with sucrose phosphorylase to obtain glucosylxyluloside (alpha-D-glucopyranosyl-beta-D- xylulofuranoside). The cost of the raw material can be reduced by using sucrose in place of alpha-D-glucose-1-phosphate. Furthermore, the raw material cost can be reduced and the production process can be simplified by simultaneously performing the D-xylulose formation reaction from D-xylulose by isomerization reaction and the glucosylxyluloside formation reaction.
