PROBLEM TO BE SOLVED: To provide a method for preliminarily treating a thermally colorable fish or shellfish, capable of improving the tone of the color on the thermal coloration of the fish or shellfish. ;SOLUTION: This method for preliminarily treating a fish or shellfish comprises bringing the fish or shellfish into contact with a ≥0.2 w/v vinegar or acetic acid aqueous solution. The fish or shellfish contains a pigment protein which releases astaxanthin and is colored. A method for producing a color- improved fish or shellfish comprises preliminarily treating the pigment protein- containing fish or shellfish by the above method and subsequently heating the preliminarily treated pigment-containing fish or shellfish at ≥70°C.;COPYRIGHT: (C)1999,JPO
