The invention relates to a method and device for accelerated fermentation in cylindro-conical fermentation tanks in beer production according to the generic part of Claim 1. According to said method, convection in the fermentation tank is accelerated and intensified without any negative effect on the biological stability of beer. This is achieved by extracting a partial flow (S) from the wort-yeast suspension (fermentation substrate) in the fermentation tank (1) via a conical bottom segment (1c), by circulating said partial flow (S) in a loop outside the fermentation tank (1) and introducing it by pressure from the bottom upwards into the fermentation tank (1). The free jet produces there an efflux (T) which generates a convection current (K) encompassing the entire content of the fermentation tank (1). The invention also discloses a device to carry out said method, wherein the discharge and feed lines (1a; 1b) are connected to each other via a loop line (4) with a recirculating pump device (12). A liquid jet mixing nozzle (2) is arranged in the discharge zone of the conical bottom segment (1c) of the fermentation tank (1). Said nozzle is connected to the feed line (1b). The outlet of the conical bottom segment (1c) leads into the discharge line (1a).
