The invention concerns a method for determining the antioxidant activity of fruits, vegetables, leaves or seeds, consumed as food and for preparing extracts thereof, characterised in that they are provided with activity that can be measured by a stable free radical, such as diphenylpicrilhydrazile; said activity being expressed in antioxidant units (U.A.R.). The extracts of fruits, vegetables or food seeds are used as additives, in powder form (lyophilizates), in tablets, capsules or stabilised solution, to fight against the oxidative process derived from food or smoking.
