The method according to the invention uses Wiener frequency filtering to denoise sound signals (u (t)). It includes a preliminary step consisting in digitizing by sampling the sound signals to denois (u (t)) and cutting them into frames. The method then comprises a first series of steps consisting in creating a noise model (1) over N frames, estimating (2) the spectral density of the noise, the energy of the noise model and calculating a coefficient reflecting the statistical dispersion of the noise. It also includes a second series of steps consisting in calculating (3) the spectral density of the signals to be denoised, for each frame. The coefficients of the Wiener filter are modified (4), for each frame successively processed, using the parameters determined at the end of the two series of steps, so as to introduce energy compensation and an adaptive overestimation of the noise. /P
