The entrails (V) of a large animal (C), such as a cow, are removed before skinning, while the dead animal is held upside down from a conveyor (A). The operator stands on a movable platform (20) which includes a pushing bar (30). The belly of the animal is slit as far as the sternum, while the pushing bar holds it at an angle, so the entrails fall out easily and are collected (4).
