PROBLEM TO BE SOLVED: To provide a method for roasting or cooking foodstuffs safely, while protecting the environment. SOLUTION: In a method for safety roasting or cooking foodstuffs while protecting the environment by a roasting-hot-air combined steam device or a steam cooking device which is program-controlled, a steam such as superheated steam is generated during the roasting or cooking, and the steam remains in the device unitl the roasting or cooking step is completed, and the moisture cna be removed from a cooking space before the completion of the roasting or cooking step. The program control of the device depends on the moisture in a specified cooking space and on the moisture in the cooking space wherein the removal of the moisture is commenced before the completion of the roasting and cooking step and the duration of the moisture removal is determined.
