PURPOSE: A preparation method of PALBOTANG is provided. The 'PALBOTANG', which is prepared by cooking a mixture of various ingredients especially with chinese medicinal herbs in a proper ratio, has rich nutrients and improves the health. CONSTITUTION: A method for the preparation of 'PALBOTANG' comprises: heating the 10 kg of ethmoid and 5 L of water at 100C for 3 hours; adding the knee bone of ox and heating again at 100C for 3 hours; picking up and cooling the knee bone; cutting the knee bone in length of 5-7 cm; cooling meat infusion in 6 hour intervals and removing the oil from the surface; reheating the meat infusion at 70C for 14 hours; cutting a rib and a tail in a proper length; heating at 100C, picking up and cooling the rib and the tail; adding the rib, the tail, the knee bone, an antler, a jujube, a ginkgo nut, a chestnut and ginseng to the meat infusion; and heating the mixture at 100C for 10 minutes.
