PURPOSE: A Lactobacillus helveticus BRD-001 which is stable to heat and acid and a high level of culture method are provided. The Lactobacillus helveticus BRD-001 is excellent in acid resistance, a bile resistance and a heat resistance, therefore can be used for various foods, medical substances and feed-stuff additives as a viable strain. CONSTITUTION: A method for culturing the Lactobacillus helveticus BRD-001 in high level comprises: sterilizing MRS(de Man, Rogosa and Sharpe) broth consisting of 0.1-0.5 wt% of yeast extract, 0.1-0.5 wt% of broth extract, 0.3-0.7 wt% of peptone, 0.1-0.7 wt% of glucose, 0.05-0.4 wt% of dipotassium hydrogen phosphate, 0.03-0.2 wt% of ammonium nitrate, 0.1-0.4 wt% of sodium acetate, 0.01-0.05 wt% of magnesium sulfate and 0.01-0.03 wt% of manganese sulfate(pH 7.0) under pressure at 121C or higher for 30-60 minutes; cooling the MRS broth to 20-45C and then inoculating the mutant; culturing the MRS broth in the fermenter at a stirring rate of 150-300 dml; after 15-20 hour culturing, supplying with 0.1-10L of the fed batch medium comprising the yeast extract and the glucose in a range of from 1:2 to 1:6 at constant rate for 1-24 hours.
