The invention relates to a process for preparing fracturable free-flowing solid flavour-oil-based capsules. The claimed process consists in adding a drying agent to the water after cross-linking the polymer coating layer and dry spraying the polymer-coated flavour-oil-based capsules previously treated with the drying agent in order to remove the water, thereby producing free-flowing solid flavour-oil-based capsules which are heat-stable and fracturable upon chewing in order to provide a uniform and sustained flavour oil release.
