The machine has a device for holding a head of a garlic bulb while moving it through several processing stations located between a loading position and an ejection position. The machine also has separate devices for cutting the stem and roots of the garlic and removing residual soil. Part of the cutting devices and a holder for the bulb are movably mounted within the machine Independent claims are included for: (1) processing a garlic bulb as above; and (2) a cutting device for use in a machine as above has movably mounted lower pair of pliers for clamping the head of the garlic adjacent the stem. Preferred Features: The holder is associated with the lower pliers. An upper pair of pliers cut the stem. Both pliers move through the processing stations. Both pliers are closed simultaneously and automatically. A brush moving tangentially to the bulb removes residual soil. Roller brushes then polish the bulb. A finger pushes up through the holder to eject the processed bulb.
