Crushing method and apparatus for measuring the rheology (rigidity, firmness, hardness, viscosity, visco-elasticity) of a paste, gel or cream product

A measuring head (6) is introduced into the product (4) under test. The head is driven so that it moves like a pendulum between two fixed surfaces (2,3) in the product. The force exerted by the product on the head is measured. The measuring apparatus comprises the head fixed to a lever (5), which has a least thickness zone (11), a kinetic chain and a Hall Effect sensor (12) and electro-magnet which measures deformation of the lever when the head oscillates in the product under test. The kinetic chain has a hinge (7) which causes the lever (5), fixed to the measuring head, to oscillate with respect to a housing (1) and a cam (9) driven by an electric motor (8).
