Treatment of substrate based on milled lupin grains, for use in preparation of nutritive product, comprises subjecting aqueous extract of substrate to bacterial fermentation, to hydrolyze alpha-galactosides
Fermentative hydrolysis of alpha -galactosides. The process consists of preparation of aqueous extract of substrate, subjecting this extract to bacterial fermentation aimed at hydrolysis of alpha -galactosides, and stopping of fermentation. Fermentative hydrolysis of alpha -galactosides results in reduction of their content in final product to below 5% (per dry wt.). Independent claims are also included for: (1) food product or component obtained using process as claimed; and (2) food preparation containing product as claimed in (1).
