PROBLEM TO BE SOLVED: To provide a method for producing a ground rice paste having viscoelasticity and excellent in enhancing ability by using a nonglutinous rice, and further to provide a new method for producing a fish paste obtained by using the ground rice paste.;SOLUTION: The nonglutinous rice is formed into a not-raw state by subjecting the nonglutinous rice to a heating action up to about 100°C of heating temperature to induce property change, and the resultant nonglutinous rice is formed into a fine particle state to provide the objective ground rice paste. The obtained ground rice paste is used in combination with a raw material (fish meat) for the fish paste in a proper proportion for the combination to provide the objective fish paste having characteristics caused by a new idea.;COPYRIGHT: (C)2002,JPO
