Antioxidant dietary fibre and concentrate of natural antioxidants from skin and pulp of guava (Psidium guava and Psidium acutangulum) and procedures for obtaining them.A procedure for obtaining natural antioxidant dietary fibres in powder form from pink guava (Psidium guava) and wild guava (Psidium acutangulum) that present a high content of dietary fibre (50 to 67% of dry weight) and of associated natural antioxidants (2 to 10% of dry weight) is developed. During their preparation, physical methods have been used that allow preserving the biological activity of the product. The antioxidant activity and capture of free radicals of 1 g of the fibres produce the equivalent of 20-42 mg of vitamin C and 50-105 mg of vitamin E. Also, a procedure for obtaining concentrates of natural antioxidants from skin and pulp of these guavas by extraction with various solvents and later concentration is developed.
