PURPOSE: A process of preparing the subject Kimchi by using ginseng, chestnut, jujube, walnut, pinenuts, peanut and ginkgo nut except conventional Kimchi material such as Korean cabbage, radish, green onion or the like is provided. Whereby, the Kimchi is effective in excretion of the waste products and toxins accumulated in human body and prevention and inhibition of various diseases generated from environmental pollution. CONSTITUTION: The mixture of 1,000g Korean cabbage, 300g radish, 300g leaf mustard(Brassica juncea) and 100g carrot is washed, finely cut, mixed in a vessel, added with 500g chestnut, 100g walnut, 100g pinenuts, 100g jujube, 300g anchovy sauce, 100g red pepper powder, 50g sesame, 30g Cinnamomi Cortex Spissus powder, 20g ginseng, 20g peanut, 10g ginkgo nut and a suitable amount of spices and then stored.
