Production of starch ester particles comprises spray drying an aqueous starch ester suspension containing a carboxylic acid with air preheated to 80-120 deg C to form predominantly round particles with a narrow size range of 3-150 microns, preferably 5-75 microns, significant surface roughness and high porosity.
