PROBLEM TO BE SOLVED: To provide a method for measuring a polyphenol content in malt quickly and simply.;SOLUTION: A grain such as the malt or the like as an object to be measured is added to a solution in which a DPPH (1,1-diphenyl-2-picrylhydrazyl) radical is dissolved by ethanol, the DPPH solution which is shaken for a prescribed time so as to be reacted is used, a reduction ratio of a peak height of a spectrum originated from the DPPH radical is found by using an electron spin resonance analyzer, and the polyphenol content in the grain is found.;COPYRIGHT: (C)2003,JPO
