PROBLEM TO BE SOLVED: To provide a method for concentrating pressed juice of a sweet potato by which the juice pressing ratio is improved and the pressed juice can efficiently be concentrated, a method for producing a healthy beverage of the sweet potato suitable for drinking without an unpleasant taste and the healthy beverage of the sweet potato. ;SOLUTION: (1) The sweet potato is frozen, thawed and then pressed to provide the pressed juice. (2) Citric acid is added to the pressed juice and the mixture is concentrated. The concentrate of the pressed juice of the sweet potato is cooled and then diluted with water to precipitate and aggregate. The aggregated precipitates are removed to afford a transparent concentrate. The transparent concentrate, if necessary, is seasoned and diluted.;COPYRIGHT: (C)2003,JPO
