A method of controlling weight gain in an animal comprises administering to the animal one or more sterol and/or stanol derivatives having the following formulae (I, II, III) wherein R is a sterol or stanol moiety, R2 is derived form ascorbic acid and R3 is hydrogen or any metal, alkali earth metal, or alkali metal; and all salts thereof.
