Process for elimination, from organic material in the process of fermentation, of hydrogen sulphide, mercaptans, ammonia and volatile chemical compounds such as amines and fatty acids comprises: (a) a first stage of oxidation of mercaptans into disulphides and hydrogen sulphide into sulphides in the presence of air and at least one catalyst, the supply of oxygen being performed by bubbling into a liquid at a pH of above 8, optionally with the addition of an alkali selected from KOH, lime, NaOH, LiOH or a carbonate of these alkali metals; and (b) a second stage of catalytic combustion of ammonia and volatile chemical compounds including certain low amines and sulphur compounds entrained in the air for the oxidation, wherein the process operates autothermically with the heat necessary for operating the process being generated by the heat of combustion in the second stage of the process and recovered by gas-gas and liquid-liquid exchangers positioned in the circuits.
