Use of surfactant, comprising inclusion complex of cyclodextrin and fatty compound, useful for preparing emulsions in e.g. cosmetics, pharmaceuticals and foods

Use as surfactant, as powder or in aqueous dispersion, of an inclusion complex (I) formed from cyclodextrin (CD) and fatty material (FM), is claimed. Independent claims are also included for the following: (1) Preparing an emulsion by producing (I), dispersing it in water and adding, with stirring, a fatty phase; (2) Method similar to (1) but with (I) dispersed in the fatty phase then water added, with stirring; and (3) Emulsions prepared by methods (1) or (2) that contain, by weight, 1-25% at least one (I), 5-75% water and 20-90% fatty or oily phase.
