PROBLEM TO BE SOLVED: To produce a boiled egg in which the yellow and the white of a hen's egg are mixed.;SOLUTION: A method for producing the boiled egg in which the yellow and the white are mixed comprises giving vibration to the egg to mix the yellow and the white, by utilizing a period in which the hen's fertile egg matures. Namely, the white part is changed into a water-dispersion state from a jelly state, when a time of 96 to 120 hr (shorter than a period in which an embryo is developed) is elapsed after the laid egg is positioned in an incubator. The vibration is given to the egg (for 30 sec or more), by fixing the timing with the above, so that the yellow is broken, mixed with the white, and homogenized, but a part of the white (about 10%) is not changed into the water-dispersion state and remains in the egg as it is. The remaining white is subjected to stationary precipitation and rotational movement, gathered into an central area of the egg, and boiled. The boiled egg in which the yellow and the white are mixed is only obtained from the fertile egg. When shell is removed from the boiled egg, the boiled egg of which the whole has a yellow color and in which the remaining white is scattered in the central area is obtained. The method never uses a needle, nor a chemical, for perforating the egg, and further the boiled egg having a high nutritive value is obtained because the fertile egg is used.;COPYRIGHT: (C)2004,JPO
