PURPOSE: An apparatus and method of controlling the operation of a kimchi refrigerator capable of preventing a frequent on/off conversion operation of a cooling apparatus by controlling a hysteresis gap due to the amount of kimchi within the kimchi refrigerator are provided. The taste of kimchi is maintained for a long period of time by controlling the internal temperature to constant values within an optimum temperature range, and consequently to extend the useful life of the cooling apparatus and minimize the occurrence of an intermittent sound. CONSTITUTION: The apparatus for controlling the operation of a kimchi refrigerator comprises: a cooling driving part(30) for cooling the interior of the kimchi refrigerator by a control signal; a temperature control part(20) for detecting the internal temperature of the kimchi refrigerator; a hysteresis gap control part(10) for determining a hysteresis gap corresponding to a temperature change rate due to the elapse of time; and a control part for performing on/off control of the cooling driving part due to the cooling-initiation and cessation temperature.
