PURPOSE: Provided is high quality of duck meat prepared by feeding bamboo liquor to a duck to prevent diarrhea by antibacterial activity of Salmonella and pathogenic E.coli, to decrease the content of fat and cholesterol, to increase the content of unsaturated fatty acid and protein and to improve storage stability and functionality. CONSTITUTION: The high quality of duck meat is prepared by feeding an antibacterial feed stuff containing 1-10% of bamboo liquid to a 1-10 week old duck. Therefore, the duck meat has low fat and cholesterol and high protein and unsaturated fatty acid.
