In a sausage making process meat is reduced to fine mincemeat in a two-stage process. In the second stage the changing consistency and condition of the meat is monitored by a compact sensor that forms an integral part of the cutter unit located under a hood, immediately prior to the cutter blades. The measuring system consists of a sensor which detects and registers the meat consistence (1), a display system (2), a colour image processing system (3), and an electrical power supply (4). The sensor further registers temperature and pressure and takes the form of a spherical unit that detects the passing mass flow of minced meat. The display gives an optical or acoustic indication.
