The air contacting the product for heating or cooling, is sterilized using ultraviolet lights (9) located in one or more of the following positions. They are inside the air induction chamber (15), inside the covering hood (7) and/or on the underside of the airflow baffle (5) for direct radiation of the product on the conveyor belt (4). The UV lights are tubes or bulbs that are individually switched. An independent claim is included for the corresponding method.
