The method involves having a baking-oven, a feeding device and a transport device for the transport of baking material from an interior of the baking-oven to a delivery station where finished baking goods are made available for customers. A data processor records the quantity of the available baking goods and over a data network the number of sold baking goods from a P.O.S. system is received and a comparison performed of the values so that the next baking sequence is commenced. Due to the comparison a signal is produced, which causes the personnel to activate the baking device. An independent claim is included for a baking device.
