The installation has an air re-circulating orifice (3) the situated between two air discharge orifices, where the installation has the shape of a roof structure. The structure is placed above a zone (4) to be treated situated between two cooled shelves (11). The orifice (3) draws the air present in the zone, so as to induce an air circulation inside the zone. The air discharge slits (6a, 6b) are arranged on the structure. An adjusting device adjusts the flow and the temperature of the air ejected through the air discharge orifices.
