PROBLEM TO BE SOLVED: To provide an oil-in-water emulsion stabilizer which prevents the phase separation of an oil-in-water emulsion in storing and preserving it, hardly causes its viscosity increase and gelation, and thus improves its stability, and to provide an oil-in-water emulsion containing the stabilizer.;SOLUTION: The oil-in-water emulsion stabilizer is composed of a water-soluble copolymer prepared by polymerizing a monomer mixture containing 2-acrylamido-2-methylpropanesulfonic acid and/or its salt and acrylic acid and/or its salt.
