PROBLEM TO BE SOLVED: To provide a method for producing agar significantly reducing agar price by shortening and simplifying a production process, and improving yield, and generating no industrial wastes so as to lead to environmental conservation; to provide agar produced by the method, rich in dietary fiber, nutrients and minerals derived from seaweed, and giving consideration to health; and to provide a processed food containing the agar.;SOLUTION: The method for producing agar includes: soaking seaweed belonging to red seaweed in an acidic water solution followed by washing the seaweed; exposing the seaweed to water followed by irradiating the seaweed with ultra-violet ray; pulverizing the seaweed into paste; heating the pasty seaweed together with water; standing the heated pasty seaweed to cool, or cooling the pasty seaweed to make it turn to coagulated one; and drying the coagulated pasty seaweed.;COPYRIGHT: (C)2010,JPO&INPIT
