METHOD OF EXTRACTING GLUCOSINOLATES FROM PLANT MATERIAL CONTAINING GLUCOSINOLATE, GLUCOSINOLATE EXTRACT, FOOD PRODUCT AND PHARMACEUTICAL COMPOSITION. The present invention relates to a process for the production of glucosinolates, particularly glucorrafanin, from cruciferous plants. More particularly, a method is provided for the production of glucosinolates from agricultural by-products and wastes. The general method comprises providing a mixture of plant material containing glucosinolate and liquid, heating the mixture so as not to activate the enzymes in the plant material, contacting the non-heat activated mixture with an anion exchange membrane whereby at least At least a portion of the glucosinolate is extracted from the liquid and absorbed into the anion exchange membrane and release of the glucosinolate from the anion exchange membrane. Preferably, the extraction and release steps are repeated at least once. Glucosinolates produced by the method of the invention may be incorporated into a variety of food, pharmaceutical and health supplements.
