The invention relates to a process for the production of wheat protein enriched soft dough biscuits. The process involves modification of added gluten by combination of enzymes. The process modifies the biscuit dough moulding characteristics as well as quality characteristics of biscuits with special reference to texture and produces the biscuits having 12 - 13 % protein as compared to 7 - 8 % protein of control biscuits.
